Catfish pepper soup is one of the Nigeria dishes popularly known for it spicy taste. its traditionally served hot and spicy depending on your spice preference.
RECIPES:
- Catfish ( cut into chunks)
- dried uziza seed ( grounded)
- fresh uziza leave ( optional)
- Crayfish ( optional)
- scent leave( optional)
- 2 or 3 scotch bonnet pepper ( grounded)
- 1 onion ( chopped)
- 1 garlic ( pounded)
- ginger ( pounded)
- stock cube
- salt
- carrot and green bean ( chopped, is for garnishing but its optional).
- local nutmeg popularly known as EHURU( optional)
DIRECTION
STEP 1: Clean the catfish with warm water by washing ,scaling properly to reduce the slippery layer, cut into your desired sizes and set aside.
STEP 2: place a pot of water on the cooker, the amount of water depend on the quantity of your catfish, add a little salt and allow it to boil.
STEP 3: Add the washed catfish into the boiled water, this enables the fish to harden it flesh, bring it to boil.
STEP 4: Add your grounded uziza, ehuru, garlic and ginger, pepper, and cubes stir gently to enable the ingredient distribute evenly.
STEP 5: check for salt and add your scent leave and uziza leave ( if using) let it simmer for few minutes, remember not to allow it to overcook.
Serve hot with either Agidi, Rice, boiled yam or you can simply eat it like that.
