Moi-moi is a Nigerian dish made from grinded beans as the main ingredients . Here’s a recipe for making it.
- beans preferably (black eyed)
- Onions
- bell pepper
- scotch bonnet
- garlic ( optional)
- ginger( optional)
- vegetable
- Nutmeg ( optional)
- cubes or seasoning cubes
- salt ( adjust to taste)
- water.
- Crayfish ( optional)
- fish ( optional)
For Garnishing
- Hard boiled eggs ( optional)
- sliced tomatoes
- sliced bell pepper.
Soak the beans in water for few minute , rub and squeeze it together to remove the skin.
- add water to remove the skin and drain the water, repeat the process until all the skin have been removed, place the beans in a blender or food processor, add onion, peppers, ginger and garlic ( if using) and blend , adding small amount of water gradually to form a thick paste.
- Transfer the beans paste to a bowl, add salt , crayfish , vegetable oil stir and mix everything together to distribute the ingredients evenly, gradually add water to the paste to your desired quantity Or liquid
- Put the mixture or the paste in a mixture in a baking pan or tie it in a foil or nylon , cook or bake till the mixture becomes solid.
the moi moi is now well cooked.
