Coconut Rice : A delicious and Healthy Alternative to Regular Rice

Coconut Rice is an aromatic dish mainly in the tropical regions,

Recipes.

  • Chicken or beef ( cut into desirable sizes).
  • onions ( chopped)
  • garlic and ginger ( optional)
  • 2 bell pepper ( chopped or sliced )
  • 2 green pepper
  • 2 yellow pepper
  • tomato paste or ketup( optional)
  • curry powder
  • coconut juice
  • corn flour for thickener optional)
  • seasonal cube.
  • salt.
  • water as needed.
  • bay leaf.

DIRECTIONS:

Step 1

In a clean pot , add your chicken or beef and season with salt ,onion , bay leaf and stock cube, add also your grinded garlic and ginger if using, steam it  and add water depending on the quantity of sauce  you want, allow it to simmer or boil till the chicken or beef becomes tender and soft.

Step 2

Add the tomato paste or ketup in the meat stock and stir it well.

Step 3

Add your coconut juice, your peppers( yellow, red and green) add also your chopped carrot, peas and green beans, stir very well to combine all the flavors, taste for salt and adjust your seasoning.

Step 4

Reduce the heat and cover the pot to simmer for about 10 to 15 minutes.

your delicious sauce is ready to be serve.
