8 simple steps to make Nigeria Vegetable Stew

To make a delicious yummy Nigeria vegetable stew, you need the following Ingredients.

Assorted vegetables example Scent leave, ugu leaves and spinach.

beef and chicken or goat meat cut into sizable pieces.

  • 1 cup of palm oil.
  • 2  onions either roughly or finely chopped.
  • fresh tomatoes well blended or Tin tomatoes .
  • 4 red  bell pepper with scotch bonnet depending on your spice preference.
  • 3 or 4  beef or chicken cubes ( maggi or knorr cube) .
  • ground crayfish ( optional).
  • locust beans ( Iru) optional.
  • Salt.
  • seasoning powder e.g  curry, thyme and paprika all are optional.

 

DIRECTIONS:

1 STEP :wash your vegetables and slice them into smaller pieces.

STEP 2 : steam your proteins with onion and seasoning cube.

STEP 3:  in a separate pot Heat the palm oil on a low heat.

STEP 4: Add the chopped onions, blended tomatoes or Tin , red pepper and the scotch bonnet cook for 5 minutes.

STEP 4 : Add the cooked beef and chickens and stir occasionally to ensure even cooking.

STEP 5 : Pour the beef stock and reduce the heat and let the meat cook until tender.

STEP 6: season with beef or chicken cubes , add salt to taste stir gently to distribute the flavor.

STEP 7:  Pour in your grounded crayfish, locust beans , prawn if you are using them remember  I said earlier that they are optional.

STEP 8 :  Finally pour in your your assorted vegetable, stir and cover to simmer until the vegetables are tender taste for salt and serve with fufu, white rice, boiled yam e. t.c.
