5 easy ( DIY) Steps to Cook Plantain Frittata

Plantain Frittata is  popular dish that is delicious with a combination of savory elements of an egg frittata and the sweetness of ripe plantain.

RECIPES:

  •  2 ripe plantains
  • 5 eggs
  • chopped onion
  • chopped green
  • 1 bell pepper
  • chopped tomatoes
  • chopped spinach ( optional)
  • mushroom( optional)
  • shredded cheese( optional)
  • groundnut or vegetable oil.

 

DIRECTIONS:

  1. peel the plantains and slice them into round shapes, heat the oil in a nonstick pan over a medium heat. Add the plantain slices and fry until they are golden brown on both sides remove them from the pan and set aside.
  2. In the same pan add a little oil if needed, add your onions, pepper , tomatoes and other vegetables you are using fry until they are soft.
  3. In a bowl beat the eggs and season with salt and pepper pour the beaten eggs over the mixtures in the pan.
  4. Arrange the fried plantain slices on top of the egg mixtures and make sure that they are evenly distributed.

5. sprinkle the shredded cheese ( if using) and cover the pan to cook about 10 to 15 minutes, once the frittata is cooked remove from the heat and let it cool for a few minutes before slicing and serving.
